Traditional Longevity Noodles

Longevity noodles are a traditional food eaten over Chinese New Year, symbolising long life and good health.

The noodles are usually served uncut, representing an uninterrupted, long life. The longer the noodle, the longer the life it is believed to bring!

 

Ingredients:

  • 200g egg noodles (or your preferred type of noodle)
  • 200g chicken breast or pork, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 1 garlic clove, minced
  • 1 small carrot, julienned
  • 100g shiitake mushrooms, sliced
  • 100g baby bok choy, chopped
  • 1 tablespoon green onion, chopped (for garnish)

 

Instructions:

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix the soy sauce, oyster sauce, sesame oil, and sugar to make the sauce. Set aside.
  3. Heat vegetable oil in a wok over medium-high heat. Add garlic and sauté until fragrant.
  4. Add the chicken (or pork) and stir-fry until cooked through. Remove from the pan and set aside.
  5. In the same wok, add the carrots, mushrooms, and bok choy, and stir-fry for a few minutes until tender.
  6. Add the cooked noodles to the wok and pour over the sauce mixture. Toss everything together to coat evenly.
  7. Add the cooked chicken or pork back into the wok and mix well. Cook for another 1–2 minutes to heat everything through.
  8. Garnish with green onions and serve hot.
