
Welsh Cake Recipe
Welsh cakes are a traditional teatime treat from Wales, perfect for celebrating St. David’s Day.
These delightful, lightly spiced griddle cakes are crisp on the outside and soft in the middle, making them an irresistible snack with a cup of tea.

Ingredients
- 225g self-raising flour
- 110g butter (cubed)
- 75g caster sugar
- ½ tsp mixed spice (optional)
- 75g currants or sultanas
- 1 egg
- 2 tbsp milk (if needed)
- A pinch of salt
- Extra butter or oil for cooking

Instructions
- Prepare the dough: In a large bowl, sift the flour and add a pinch of salt and mixed spice. Rub in the butter with your fingertips until the mixture resembles breadcrumbs.
- Add the sweetness: Stir in the sugar and dried fruit.
- Bind the mixture: Beat the egg and add it to the bowl. Mix to form a soft dough, adding a little milk if necessary.
- Roll out: Lightly flour a surface and roll the dough to about 1cm thick. Use a round cutter (about 6cm) to cut out discs.
- Cook on the griddle: Heat a lightly greased frying pan or griddle over medium heat. Cook the cakes for about 3 minutes on each side, until golden brown and cooked through.
- Serve: Allow to cool slightly, then sprinkle with caster sugar and serve warm.
These Welsh cakes are best enjoyed fresh, but they can also be stored in an airtight container for a couple of days. Serve them plain, with butter, or even with jam for an extra treat.
