Ingredients

For the Pastry Topping:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6-8 tablespoons ice water

For the Filling:

  • 6 apples, rotary peeled and sliced with a Rotary Apple Peeler
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For Assembly:

  • 1 egg (for egg wash)
  • 1 tablespoon milk

Instructions

Prepare the Pie Crust:

  1. In a large bowl, whisk together flour, salt, and sugar.
  2. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just holds together.
  4. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.

Make the Apple Filling:

  1. In a large bowl, toss the peeled and sliced apples with sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  2. Let the mixture sit for 10 minutes while rolling out the dough.

Assemble the Pie:

  1. Preheat the oven to 375°F (190°C).
  2. Pour the apple filling into your Benary Vegetables Tart Oven Dish, spreading evenly.
  3. Roll out your pastry topping and use a Lattice Pastry Cutter to create strips. Arrange them in a woven pattern over the apples. Trim and crimp the edges.

Bake the Pie:

  1. Whisk the egg and milk together, then brush over the lattice crust.
  2. Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden and the filling is bubbling.
  3. Let the pie cool for at least 2 hours before serving.

Enjoy a slice of this warm, spiced apple pie as you savour the fresh blooms and breezy days of spring!
