Caramelised Onion and Goats Cheese Tart

This savoury tart is a perfect addition to any winter meal. Sweet caramelised onions pair beautifully with tangy goat cheese, all nestled in a flaky pastry crust.
 
Ingredients

For the crust:

  • 250g plain flour
  • 125g unsalted butter (cold, diced)
  • 1 egg yolk
  • 2-3 tbsp cold water
  • Pinch of salt
For the filling:
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 200g goat cheese (soft or crumbled)
  • 3 large eggs
  • 200ml double cream
  • 100ml milk
  • 1 tsp dried thyme or fresh thyme leaves
  • Salt and pepper, to taste

Instructions
Step 1: Make the Pastry

  1. In a mixing bowl, combine flour and salt. Rub in the butter with your fingers or a pastry cutter until the mixture resembles breadcrumbs.
  2. Add the egg yolk and cold water, mixing until the dough comes together. Wrap in cling film and chill for 30 minutes.
Step 2: Prepare the Caramelised Onions
  1. Heat olive oil and butter in a pan over medium heat. Add sliced onions and cook slowly, stirring occasionally, for 20-25 minutes until softened and golden.
  2. Stir in balsamic vinegar and sugar, cooking for another 2-3 minutes. Set aside to cool.
Step 3: Roll and Blind Bake the Crust
  1. Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.
  2. Roll out the chilled pastry with a rolling pin, then gently press it into your tart tin. Trim any excess pastry.
  3. Line the pastry with baking paper, fill with baking beans or rice and blind bake for 15 minutes. Remove the baking paper and beans, then bake for another 5 minutes.
Step 4: Assemble the Tart
  1. Spread the caramelised onions evenly over the base of the tart.
  2. Crumble or slice the goat cheese and scatter over the onions.
  3. In a mixing bowl, whisk together eggs, cream, milk, thyme, salt and pepper. Pour the mixture gently over the filling.
Step 5: Bake the Tart
  1. Bake in the preheated oven for 25-30 minutes or until the filling is set and lightly golden.
  2. Let the tart cool slightly before removing it from the tin.
Step 6: Serve and Enjoy
  • Slice and serve warm or at room temperature with a side salad or roasted vegetables.
