Caramelised Onion and Goats Cheese Tart
This savoury tart is a perfect addition to any winter meal. Sweet caramelised onions pair beautifully with tangy goat cheese, all nestled in a flaky pastry crust.

For the crust:
- 250g plain flour
- 125g unsalted butter (cold, diced)
- 1 egg yolk
- 2-3 tbsp cold water
- Pinch of salt
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tbsp balsamic vinegar
- 1 tsp sugar
- 200g goat cheese (soft or crumbled)
- 3 large eggs
- 200ml double cream
- 100ml milk
- 1 tsp dried thyme or fresh thyme leaves
- Salt and pepper, to taste

Instructions
Step 1: Make the Pastry
- In a mixing bowl, combine flour and salt. Rub in the butter with your fingers or a pastry cutter until the mixture resembles breadcrumbs.
- Add the egg yolk and cold water, mixing until the dough comes together. Wrap in cling film and chill for 30 minutes.
- Heat olive oil and butter in a pan over medium heat. Add sliced onions and cook slowly, stirring occasionally, for 20-25 minutes until softened and golden.
- Stir in balsamic vinegar and sugar, cooking for another 2-3 minutes. Set aside to cool.
- Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.
- Roll out the chilled pastry with a rolling pin, then gently press it into your tart tin. Trim any excess pastry.
- Line the pastry with baking paper, fill with baking beans or rice and blind bake for 15 minutes. Remove the baking paper and beans, then bake for another 5 minutes.
- Spread the caramelised onions evenly over the base of the tart.
- Crumble or slice the goat cheese and scatter over the onions.
- In a mixing bowl, whisk together eggs, cream, milk, thyme, salt and pepper. Pour the mixture gently over the filling.
- Bake in the preheated oven for 25-30 minutes or until the filling is set and lightly golden.
- Let the tart cool slightly before removing it from the tin.
- Slice and serve warm or at room temperature with a side salad or roasted vegetables.
