Christmas Day is a feast of indulgence but with all of that delicious food comes the inevitable question: what to do with the leftovers?

Boxing Day is the perfect opportunity to get creative in the kitchen. Reducing waste while enjoying the flavours of the festive season all over again.

Here are some inspiring ideas to transform your Christmas leftovers into delicious meals:

 

Turkey Sandwiches: Keep it classic with Boxing Day sandwiches. Layer turkey, stuffing, cranberry sauce and gravy in a soft roll for the ultimate festive treat.

Bubble and Squeak: Combine leftover roasted or boiled potatoes, brussel sprouts, carrots and parsnips in a pan. Fry until golden and crispy for a rustic side dish or main meal.
