Zucchini Noodles with Pine Nuts and Feta

When the weather turns grey and it begins to get cold outside, there is nothing nicer than hibernating indoors under the covers snacking on comfort food. Treat yourself this January and enjoy this nutty zucchini noodles without the guilt you would have when tucking into a large bowl of pasta.

Zucchini Noodles with Pine Nuts and Feta
  • 2 tablespoons of pesto
  • 2 tablespoons of feta
  • 2 tablespoons of pine nuts
  • Olive oil to garnish
  • Salt and pepper to season
  • 1-2 zucchini (courgette) spiralized

Preparation method

  1. Place your spiralized zucchini into a bowl and add the pesto, feta and pine nuts before mixing.
  2. Finish by garnishing with olive oil or salt and pepper.
  3. If you prefer, you can toast the pine nuts. to toast the pine nuts add them to a frying pan and place over a high heat, this should only take five minutes.
