Vegan Chia Seed and Pomegranate Yogurt Parfait

Ingredients

  • 2 tablespoons of chia seeds
  • 2 tablespoons of pomegranate seeds
  • 2 tablespoons of chopped pistachios
  • 245ml of dairy free yogurt
  • 60ml of pomegranate juice

Preparation method

  1. In a small bowl mix together, the pomegranate juice and the chia seeds before chilling in the fridge overnight.
  2. In your bowl of choice, layer the mixed chia mixture with the yogurt before topping with pistachios and the pomegranate seeds.
