Vegan- BBQ Chickpea & Cauliflower Flatbreads with Avocado Mash
A yummy Vegan friendly treat, the perfect start to your Easter holiday and makes the perfect lunch when lounging around the house this bank holiday!

Ingredients
340g of small cauliflower florets
BBQ Chickpea nuts
2 ripe avocados
1 tablespoon of extra-virgin olive oil
2 tablespoons of lemon juice
4 toasted flat breads
2 tablespoons of salted pumpkin seeds
Hot sauce
Preparation method
On a large rimmed baking sheet, add the cauliflower along with the olive oil and half a teaspoon of salt before roasting in the oven at 220°C for around 25 minutes.
Take the ripe avocados, topping with the lemon juice and the salt before mashing and spreading over the top of the flatbread.
On top on the flatbread, add the roasted cauliflower, chickpeas and pumpkin seeds before drizzling with hot sauce to serve.
