Ingredients
500g turkey
3 tbsp red Thai curry paste
½ bunch spring onion finely chopped
Dash of vegetable oil
For the mango salsa
1 mango, peeled, stone removed
1 large tomato, seeds removed
1 small red onion
1 mild red chilli
Juice of 4 limes
salt and freshly ground black pepper
1 tbsp olive oil
Preparation method
Put the turkey through a mincer, mix in a bowl with the curry paste, spring onion and a dash of oil. Season. Shape the mixture into 4 burgers and refrigerate till you need them.
Place the mango, tomato, red onion, chilli and lime juice into a Veggichop and chop to combine. Season to taste, with salt and freshly ground black pepper and set aside until ready to serve.
Pre-heat a grillpan to smoking hot. Do not oil the pan. Add the burgers and cook for 1-2 minutes on each side, or until caramelised and cooked through.
