Thai Turkey Burgers with Mango Salsa

Thai Turkey Burgers with Mango

  • 500g turkey
  • 3 tbsp red Thai curry paste
  • ½ bunch spring onion finely chopped
  • Dash of vegetable oil

For the mango salsa

  • 1 mango, peeled, stone removed
  • 1 large tomato, seeds removed
  • 1 small red onion
  • 1 mild red chilli
  • Juice of 4 limes
  • salt and freshly ground black pepper
  • 1 tbsp olive oil

Preparation method

  1. Put the turkey through a mincer, mix in a bowl with the curry paste, spring onion and a dash of oil. Season. Shape the mixture into 4 burgers and refrigerate till you need them.
  2. Place the mango, tomato, red onion, chilli and lime juice into a Veggichop and chop to combine. Season to taste, with salt and freshly ground black pepper and set aside until ready to serve.
  3. Pre-heat a grillpan to smoking hot. Do not oil the pan. Add the burgers and cook for 1-2 minutes on each side, or until caramelised and cooked through.
  4. Serve with mango salsa.
