Thai Chicken Kebabs

These are so easy to put together for an evening meal. Serve with rice and some salad.

Thai Chicken Kebabs
PREP TIME 25 mins COOK TIME 20 mins MAKES 4 to 6
  • 6 large chicken breasts, cut in pieces

For the marinade

  • 50g/2oz coriander, roughly chopped
  • Juice of 3 limes
  • dash of soy sauce
  • 1 tsp grated ginger
  • 1 tbsp honey
  • half a chilli, de-seeded and finely chopped
  • dash of vegetable oil
  • Sea salt and fresh ground black pepper
  • For the cooking

    • Bamboo skewers, which need soaking for at least an hour

Preparation method

  1. Pre-heat the oven to 175C. In the Instant Marinator combine all the marinade ingredients. Add the chicken pieces and marinade for 20 minutes.
  2. Heat a grillpan to smoking hot. While it is heating, thread the chicken onto the skewers.
  3. Char grill the skewers lightly on the grillpan and finish them off in the oven for 10 minutes and serve.
