With National Gin Day on Saturday and with the UK rhubarb season coming to a close, why not combine both ingredients to create a delicious summer cocktail to enjoy with friends.

Ingredients
1.5 parts of gin of your choice, Hendrick’s is ideal for this cocktail
3 parts of tonic
1.5 parts rhubarb and strawberry syrup
Fresh strawberries to garnish
Preparation method
To create the rhubarb and strawberry syrup, add 175g of both strawberry and rhubarb into your saucepan along with 235ml of water and 150g of sugar. Bring the pan to the boil before allowing to simmer for 10 minutes until the fruit has begun to break down. Take the pan and strain, pouring the syrup into a glass clip top bottle and placing into the fridge to chill.
Once your syrup has chilled, take your chosen glass, measuring the gin and the rhubarb syrup into the glass.
Top the gin and syrup with some ice before adding the tonic water.
