Spooky chocolate chip pumpkin cookies

Bringing the kids together this Halloween has just got easier.

With these delicious and fun cookies, you can use our spooky pumpkin cookie cutters to get into the festive spirit this half term.

Spooky chocolate chip pumpkin cookies

Ingredients for the cookie:

  • 125g of soft butter
  • 100g brown sugar
  • 125g of caster sugar
  • 1 teaspoon of vanilla extract
  • 1 egg lightly beaten
  • 225g self raising flour
  • ½ teaspoon of salt
  • 200g of chocolate chips

Ingredients for the icing:

  • 4 cups of icing sugar
  • ¼ cup of water
  • ¼ teaspoon of vanilla extract
  • Orange food colouring
  • ¼ cups of golden syrup
  • 55g of melted cooking chocolate

Preparation method

  1. Preheat the oven to 180°C
  2. Mix the butter and sugar with a whisk before combining the egg and vanilla
  3. Sift in the flour and salt
  4. Add the chocolate chips
  5. Roll the mixture into walnut size balls
  6. Place the dough onto an un-greased baking paper, baking for only 7 minutes if you are wanting a doughy cookie. If you prefer a crispier golden cookie, cook for 10 minutes.
  7. To make the icing, start by sifting icing sugar into a mixing bowl.
  8. In a small saucepan over the medium heat, combine the golden syrup, water and bring to the boil.
  9. Remove the saucepan from the heat and pour the mixture into the sifted sugar. Add the vanilla and stir until it is completely mixed and smooth.
  10. Pour half the mixture into a separate bowl to be turned into black icing.
  11. Add the orange food colouring, pouring in the amount depending on the shade required. Stirring until combined.
  12. The icing should be thin enough to be easily spread onto the cookies with a small spatula.
  13. To make the black icing to decorate the pumpkin's eyes and mouth, follow the same instructions but with the unused cooking chocolate to replace the orange food colouring.
