Smashed Avocado

Celebrating our love of all things avocado, this smashed avocado recipe has highlighted how unbelievably easy it is to create your favourite weekend treat in the comfort of your own home. For those wanting more than just avocado and their favourite sour dough bread, add a poached egg or two for pure satisfaction.

  • 2 tablespoon of white wine vinegar
  • 1 ripe avocado
  • 1 lime, juiced
  • 3 drops of hot pepper sauce
  • 2 slices of sourdough
  • 1 tablespoon of extra virgin olive oil
  • 2 eggs

Preparation method

  1. Start by filling up a large saucepan with water and placing on the hob to boil, add the vinegar.
  2. Cut the avocados in half, removing the skin and taking out the stone. Add the avocado flesh into a bowl, add half of the lime juice, the pepper sauce and some salt before mashing the avocado. Using either a fork or a pestle and mortar is ideal for smashing the avocado.
  3. Preheat the grill to the highest temperature and with the sour dough, brush it will oil on both sides and place into a pan to toast for 1-2 minutes on both sides.
  4. With the boiling water on the hob, poach the eggs for 2-3 minutes. When the eggs have cooked, remove with a slotted spoon and drain on kitchen paper.
  5. Take the smashed avocado and spread over the sourdough, on top of the smashed avocado add the poached eggs and season with pepper.
  6. If you are wanting to add extra flavour to your smashed avocado, crumble up some feta to place on top of your toast or add rocket as a side salad.
