100g of plain flour
2 large eggs
300ml of milk
1 tablespoon of vegetable oil or extra virgin olive oil
Preparation method
In a large mixing bowl, add the flour, eggs, milk and oil before whisking together. Make sure that when you whisk the mixture, that there are no air bubbles or lumps left.
In a medium sized frying pan wipe some oil around the pan using some kitchen roll before placing onto a medium heat to warm up.
Once the pan has begun to warm up, ladle a spoonful of the mixture into the pan to cook for a minute on each side or until it begins to turn golden.
Once cooked remove the pancakes from the pan, placing into the oven to keep warm and serving with a topping of your choice.
