By eating a diet high of antioxidants, you can you reduce your chances of dementia by nurturing those vital brain cells. This delicious salmon and broccoli quiche is stuffed full of good ingredients.

1 pastry sheet
4 large eggs
250ml of cream
Dill, finely chopped
Black pepper to season
3 fillets of salmon, hot smoked
1 broccoli, cut into florets and steamed
225g of cheddar cheese, grated
Preparation method
Start by preheating the oven to 190°C
Using a Dexam quiche pan, line the tin with the shortcrust pastry, removing any excess pastry.
Prick the bottom of the pastry with a fork before covering with a sheet of baking paper and filling with dried cooking beans.
Bake the quiche in the oven for 10 minutes before removing from the oven and removing the baking paper and baking beans.
Return the quiche pan with the pastry to the oven to cook for a further 10 minutes before removing to stand.
In a large mixing bowl, whisk together the eggs and the cream before adding the dill and seasoning with black pepper.
Take the cooked smoked salmon and flake the fish across the bottom of the quiche pan before topping with broccoli and the grated cheddar cheese. Once you have formed a layer, spread the egg and cream mixture over the ingredients.
Return the quiche pan into the oven to cook for another 30 minutes or until the mixture has set and turned a delicious golden shade.
