A refreshing take on using the rhubarb you have collected from this years' harvest. Best served chilled while lounging in the sun.

Ingredients
450g of rhubarb chopped
300g of caster sugar
1 orange zested and juiced
1 lemon zested and juiced
1 sliced of root ginger peeled
Preparation method
Using a large saucepan over a medium heat, add the sugar and bring the pan to a simmer before adding both the zest and juice from the orange and lemon.
Stir all the ingredients together before adding to the saucepan the rhubarb and the ginger.
Continue to cook the mixture, stirring. Once the rhubarb has begun to fall apart, pour the mixture through a sieve into a heatproof jug to cool down.
Once the cordial has cooled, transfer your rhubarb cordial into your storing bottles.
