1 tablespoon of olive oil
1 diced onion
5 cloves of diced garlic
1 red chilli pepper diced
3 cups of cubed pumpkin
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon crushed red pepper flakes
½ cup quinoa
2 ounce can of black beans
5 cups of vegetable broth
2 bay leaves
Preparation method
Heat the oil in a pan over a medium heat and cook the onion for a few minutes.
Add the garlic and red chilli pepper and cook until aromatic
Add pumpkin and spices and cook for a couple of minutes
Add 2 cups of vegetable broth and quinoa and bring to the boil and cook for 5 minutes before adding the remaining vegetable broth, before bringing back to the boil.
Add beans and bay leaves and bring to the boil again, before reducing the heat, simmer for 5-10 minutes.
When served garnish with the avocado and lime juice.
