Quinoa black bean pumpkin soup

Quinoa black bean pumpkin soup

  • 1 tablespoon of olive oil
  • 1 diced onion
  • 5 cloves of diced garlic
  • 1 red chilli pepper diced
  • 3 cups of cubed pumpkin
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes
  • ½ cup quinoa
  • 2 ounce can of black beans
  • 5 cups of vegetable broth
  • 2 bay leaves

Preparation method

  1. Heat the oil in a pan over a medium heat and cook the onion for a few minutes.
  2. Add the garlic and red chilli pepper and cook until aromatic
  3. Add pumpkin and spices and cook for a couple of minutes
  4. Add 2 cups of vegetable broth and quinoa and bring to the boil and cook for 5 minutes before adding the remaining vegetable broth, before bringing back to the boil.
  5. Add beans and bay leaves and bring to the boil again, before reducing the heat, simmer for 5-10 minutes.
  6. When served garnish with the avocado and lime juice.
