Pumpkin muffins with a chocolate swirl

In autumn, nothing feels more festive than tucking into some pumpkin treats, instead of wasting the inside of your pumpkin this year, why not turn it into a delicious guilt-free snack.

It’s simple, tasty and everyone will love it, how about giving our pumpkin muffins with a chocolate swirl a go!

  • 375g of caster sugar
  • 350ml of vegetable oil
  • 4 eggs
  • 400g pumpkin puree
  • 60ml water
  • 375g plain flour
  • 2 tsp of baking powder
  • 2 tsp of bicarbonate of soda
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of salt
  • 325 of chocolate chips

Preparation method

  1. Preheat the oven to 200°C
  2. Grease and flour the muffin tin or you can use paper muffin cases
  3. Mix the sugar, oil and eggs then add the pumpkin and water.
  4. In a separate bowl, mix together the flour, bicarbonate of soda, baking powder, spices and salt.
  5. Add the mixed sugar, oil and eggs to the bowl and add the chocolate chips.
  6. Fill the muffin cases 2/3 full with the mix and place into the preheated oven for 20 to 25 minutes.
