Going meat free doesn’t necessary mean lentils and beans, instead enjoy the same luxuries as before. This Pulled BBQ Jackfruit is a yummy alternative to Pulled Pork and is perfect in either a burger or a taco.

Ingredients
2 tins of jackfruit
1 onion thinly sliced
113g of BBQ sauce
85g of soy sauce
85g of rice syrup
1 teaspoon of ground paprika
1 teaspoon of chipotle
85g of tomato purée
Preparation method
Start by preheating the oven to 180°C.
Using a colander, drain the Jackfruit when removing it from its tin and using a paper towel, pat dry the fruit. Place the Jackfruit into the oven to cook for one hour on each side.
Two hours later when the Jackfruit has been cooked, in a medium frying pan, add the onion and let the onion fry for around 5 minutes before adding the remaining ingredients, including the Jackfruit.
Give all the ingredients a stir before leaving to simmer for around 30 minutes, stirring occasionally throughout. If there are any chunky bits of fruit, using a wooden spoon, break the pieces into smaller chunks.
After 30-40 minutes, remove the ingredients from the saucepan and serve either as a filling in a burger with salad or in a taco, the choice is up to you.
