Pineapple Upside- Down Cake with Cherries

A fun and fruity dessert, this Pineapple Upside Down Cake is a summer staple served with cherries and either custard or homemade ice cream.

Pineapple Upside- Down Cake with Cherries

  • 50g of butter
  • 50g of brown sugar
  • 7 pineapple rings
  • Handful of glace cherries
  • Cake:
  • 100g of butter
  • 100g of caster sugar
  • 100g of self-rising flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 2 eggs

Preparation method

  1. Start by preheating the oven to 180°C on fan.
  2. To create the topping of the cake, beat together the butter and sugar until it has turned light and fluffy before spreading over the base of your chosen cake tin, we used our Chasseur cast iron frying pan. Spread the topping a quarter of the way up the sides of your pan before arranging the pineapple rings, drained from their tin on top of the topping.
  3. In the centre of each of the pineapple rings, add a cherry.
  4. In a large mixing bowl, add all the cake ingredients and 2 tablespoons of left over pineapple juice before whisking together until you have created a smooth mixture. Take the mixture, spooning it into the pan on top of the pineapple and cherries. Use a spatula to smooth the mixture until it is even.
  5. Place the cake into the preheated oven to bake for 35 minutes. After 35 minutes, remove the cake, leaving it to stand for 5 minutes before turning it out onto a plate and serving.
  6. You can either serve your upside-down pineapple cake with custard or homemade vanilla ice cream.
