Mushroom and Caramelised Onion Frittata

A delicious mouth-watering frittata that as well as being a well-deserved treat, also features numerous health benefits to keep you healthy this cold winter with the help of the magical mushrooms.

Mushroom and Caramelized Onion Frittata

  • 1 chopped red onion
  • 450g of fresh mushroom
  • 3 tablespoons of butter
  • 3 tablespoons of olive oil
  • 1 minced garlic clove
  • 170g of grated cheddar cheese
  • 85g of grated Parmesan cheese
  • 8 large eggs
  • 3 tablespoons of whipping cream
  • 1 teaspoon of salt
  • 1 teaspoon of pepper

Preparation method

  1. In a frying pan, start off by sautéing the mushrooms and onions in the butter and oil, until the mushrooms have softened.
  2. Once the mushrooms have softened, reduce the heat and cook on a low temperature for 30 minutes. When the ingredients have turned a golden brown, add the garlic and shallot and leave for a minute longer.
  3. Transfer the cooked mixture to your quiche dish and sprinkle on top the grated cheeses.
  4. In a large bowl, mix together the eggs, cream, salt and pepper. Once the ingredients have all been mixed, pour the mixture over the top and place in a preheated oven at 180°C to cook for 4-6 minutes, until the eggs have completely cooked.
  5. Leave to stand for a few minutes before cutting to serve.
