Moroccan Carrot Soup

Moroccan Carrot Soup

  • 220g of chopped onions
  • 450g of large carrots, peeled and diced
  • 500ml of chicken broth
  • 2 tablespoons of butter
  • 1 ½ teaspoons of cumin seeds
  • 1 tablespoon of honey
  • 1 teaspoon of fresh lemon juice
  • 1 teaspoon of all spice
  • 170g of plain yogurt

Preparation method

  1. In a large saucepan over a medium heat, melt the butter before adding the onion to sauté for 2 minutes.
  2. Once the onions have begun to sauté, mix in the carrots before adding the broth and bringing to the boil.
  3. Reduce the heat before covering and simmering the mixture until the carrots have turned tender which should take around 20 minutes.
  4. In a smaller saucepan, add the cumin seeds to the pan and leave them to cook until they become fragrant which should take around 4-5 minutes. Be sure to stir the cumin seeds to stop them from burning. Add the cumin seeds to a spice mill and grind.
  5. Remove the soup from the hob and using a blender, blend the ingredients in small batches until you have made a smooth texture that resembles soup. After blending each batch of soup, return it to the same pan that you used to cook it in.
  6. With the soup back in the pan, add the honey, lemon juice and all spice before seasoning with salt and pepper and whisking to blend all together.
  7. When the soup has reheated, pour the soup into bowls before drizzling with the yogurt and sprinkling with the homemade ground cumin.
