Mojito Turkish Delight

Ingredients

  • Mojito Syrup:
  • 200g of fresh mint leaves
  • 500g of granulated sugar
  • 5 limes, juiced
  • 120ml of rum
  • Turkish Delights:
  • 8 leaves or 22g of gelatine
  • 500g of granulated sugar
  • Few drops of mojito syrup
  • 2 tablespoons of icing sugar
  • 1 tablespoon of cornflour

Preparation method

  1. Start by making the mojito syrup to add to the Turkish Delights. Prepare the mint by removing the leaves from the stalk. In a saucepan with boiling water, add the mint leaves for around 15 seconds.
  2. While you are waiting for the water to boil, cut the limes in half and using a juicer, juice the limes.
  3. In another saucepan, add 235ml of water to the 500g of sugar, placing it on a medium heat, keep stirring until all the sugar has been dissolved. Remove the saucepan from the heat, stirring in the fresh lime juice, rum and crushed mint juice, place the syrup to the side to sit for around 30 minutes.
  4. To create mint juice, using a pestle and mortar, take the blanched mint leaves and crush them until you have created a juice.
  5. After you have made the mojito syrup and have left it to sit on the side for 30 minutes, the time has come to create the Turkish Delights.
  6. In a medium sized saucepan, add 300ml of water along with the gelatine. Stir in the gelatine, placing on a medium heat while it dissolves into the water. Once the gelatine has dissolved, add in the sugar and stir. increase the heat slightly and leave to simmer for around one hour.
  7. Remove the pan from the heat and stir in your mojito syrup from earlier. Using your chosen tin, wet the tin with cold water before pouring the Turkish Delight into the pan and place in a cool area overnight to set.
  8. Taking the icing sugar and the cornflour, mix together the ingredients on a chopping board, before easing the Turkish Delight onto the board. Using a damp knife, cut the Turkish Delight into squares before coating with the sugar/cornflour mix.
