Mojito Popsicles

With the weather getting undoubtedly warmer, spoil yourself and turn your favourite cocktail into the perfect cooling treat.

Mojito Popsicles

  • 150g of sugar
  • 20 mint leaves
  • 500ml of water
  • 60ml of lime juice
  • 60ml of rum

Preparation method

  1. Start with a small saucepan, heating up the sugar and water and bringing to the boil. Once the mixture has meet the boil, remove from the heat, stirring in the mint leaves before covering and leaving to cool.
  2. Once the syrup has cooled, pour the syrup into a bowl, combining in the lime juice and rum before pouring the mixture into our lolly moulds, adding more mint leaves into each mould and placing in the freezer to freeze for 5 hours to set.
