Huevos Rancheros

A Mexican dish through and through, this breakfast dish features everything that you love. With eggs, tacos and guacamole, there really is no other motivation to get you up and out of bed than this Mexican classic!

Ingredients

  • 1 egg
  • 1 tortilla wrap
  • 200g of black beans
  • 1 tablespoon of vegetable oil
  • ½ avocado, sliced
  • 50g of feta
  • Hot chilli sauce

Preparation method

  1. Start by adding the vegetable oil to your chosen frying pan over a high heat. Once the oil is hot, add the tortilla to the pan and fry for 1 -2 minutes on each side before transferring to the plate. You can tell when the tortilla has been cooked enough, as the edges should begin to crisp.
  2. In the same pan, crack the egg into the pan to cook. While the egg is cooking, place the beans into a bowl, season before mashing with a fork.
  3. With the now mashed beans, spread them all over the tortilla before topping with the fried egg, avocado, feta and the hot chilli sauce. If you have any lime, squeeze some fresh lime juice over the top of your dish before serving.
