Never heard of Horchata? Well neither did we until we started looking at authentic Mexican drinks and cuisines. A traditional drink made from rice, milk, vanilla and cinnamon served chilled over ice.

Ingredients
185g of uncooked white long-grain rice
1.2 litres of water
120ml of milk
½ tablespoon of vanilla extract
½ tablespoon of ground cinnamon
125g of caster sugar
Preparation method
Using a blender, pour the water and rice into a blend, mixing the ingredients until the rice has begun to break.
Leave the rice and water to rest at room temperature for around 3 hours.
Using a sieve, strain the water and rice into a jug, binning the rice at the end.
Stir in the milk, vanilla, sugar and cinnamon into the rice water and chill before pouring over ice to serve.
