Foraged Forest Fruit Crumble

Whether it be blackberries, damsons, strawberries or apples, foraged forest fruit crumble served with custard is always a traditional favourite

Foraged Forest Fruit Crumble
PREP TIME 10 minutes COOK TIME 15 minutes MAKES 4

For Crumble:

  • 120g plain flour
  • 60g caster sugar
  • 60g butter, cubed at room temperature
  • Extra butter for greasing pan
  • For Fruit Mix:

    • 450g of prepared fruit ideally in season
    • 30g unsalted butter
    • 30g demerara sugar
    • 1/4 tsp ground cinnamon

Preparation method

  1. Pre-heat ove to 180°C/350F/Gas .
  2. Place the flour and sugar in a large bowl and mix well. Taking a few spoons of butter at a time rub into the flour mixture. Keep mixing until the mixture resembles breadcrumbs.
  3. Add fruit to large mixing bowl and sprinkle with sugar, flour and a pinch of cinnamon.
  4. Grease a rectangular pan (cast iron rectangular dish perfect for this)
  5. Add the foraged fruit mixture to the dish
  6. Bake in oven for approximately 12-15 minutes, until the crumble mix is bubbling
  7. Allow to stand for 5 minutes and serve with homemade custard.
