Easter Biscuits

This is a recipe for the children, a super simple recipe that they can attempt under adult supervision.

  • For the biscuits:
  • 90g of unsalted butter
  • 200g of plain flour
  • 100g of caster sugar
  • 1 egg
  • ½ teaspoon of vanilla extract
  • ½ teaspoon of baking powder
  • ½ teaspoon of salt
  • For the icing:
  • 140g of butter
  • 280g of icing sugar
  • 1-2 tablespoons of milk
  • Few drops of food colouring
  • Or pre-made buttercream icing

Preparation method

  1. Start by sifting into a medium mixing bowl the flour, salt and baking powder.
  2. In another medium sized mixing bowl, start to cream together the butter and caster sugar. To cream the ingredients, use either an electric whisk or a fork and beat the two ingredients together until they turn fluffy.
  3. Once they have turned fluffy, beat in the egg and the vanilla extract.
  4. When all the ingredients have been mixed together, add the flour to the mix, mixing it into you have created a dough. Once you have made a ball of dough, cover the bowl with cling film and leave to rest in the fridge for an hour.
  5. While the biscuit dough is resting in the fridge, preheat the oven to 180°C.
  6. Lightly flour a surface and a rolling pin and turn the biscuit dough out onto the floured surface and gently start rolling the dough out.
  7. Once you have rolled the dough out, with your chosen Easter cookie cutters, start to cut the biscuits out. Rolling the left-over dough together and rolling out to create more biscuits.
  8. When you have finished cutting your biscuits out, place the cut animals onto a baking tray with a non-stick baking mat and place into the oven to bake for around 10 minutes.
  9. Once cooked, remove the biscuits from the oven and place onto a cooling rack to cool before decorating.
  10. In small mixing bowls, spoon a small amount of butter icing, either homemade or purchased into the bowls.
  11. Add a few drops of different coloured food colouring to each of the butter icing. Mix the butter icing together and leave while you wait for the biscuits to cool.
  12. Once the biscuits are cool you can begin to decorate the biscuits.
