Using our fantastic, new non-stick Petit Four Pan, you can create these delicious treats to give family and friends when posting your own dinner party.

Ingredients
290g dark chocolate
240g single cream
40g liquid glucose
Cocoa Powder
Preparation method
Start by placing the dark chocolate into a heatproof bowl, placing on top of a saucepan filled with simmering water.
Stir the chocolate occasionally until it has begun to melt.
Using your thermometer, heat the chocolate until it reaches 50°C.
Once the chocolate has reached 50 degrees, pour the cream and glucose into a clean saucepan, before bringing it to the boil. Remove from the heat.
Pour the cream and glucose mix into a bowl. Using a spatula slowly beat in the chocolate withthe cream mixture. Using a whisk, blend the mixture until it is has been thoroughly mixed and formed a smooth and glossy finish.
Pour the mixture into your Dexam non-stick 48 cup tin and place into a cool area overnight to set.
The following morning you will find that your chocolate truffles have set, now you can remove them from the tin, coating with the cocoa powder before serving or storing.
