The classic Chicken Chasseur is a wholesome autumnal winter dish. Serve with broccoli and roast potatoes for a perfect supper.

Ingredients:
5-6 boneless chicken breasts
5-6 bacon strips
5-6 Bay leaves to garnish chicken/bacon
1 large onion

1 clove garlic
500ml Chicken stock
200 ml of red wine
Salt and pepper to taste
Preparation method
Preheat the oven to 180°C. Heat the oil and half the butter in a grill pan. Season the chicken, then fry for about 5 mins on each side until golden brown. Remove and set aside..
Add onion and fry until soft .
Add carrots, tomatoes, mushrooms and garlic to casserole dish
Make stock and add to pan
Add a good measure of red wine to casserole.
Remove chicken from grill pan and season and wrap with each fillet with bacon.
Add chicken wrapped with bacon to casserole dish.
Place lid on casserole and place in oven for 1 hour.
Test that chicken is cooked thoroughly and then serve straight away
