Cajun Tofu Tacos

The mere thought of eating tofu can feel instantly off putting to many people, but by turning plain tofu into a spiced taco, you can look forward to your tofu dinner.

Mexican tofu tacos
PREP TIME 30 minutes MAKES 4

Ingredients

  • 400g of tofu
  • 1 lime juice
  • ½ white cabbage shredded
  • Oil
  • Pinch of cayenne pepper
  • 1 teaspoon of oregano dried
  • 1 teaspoon of paprika smoked
  • 1 teaspoon of cumin ground
  • 1 teaspoon of garlic powder
  • 8 small corn tortillas
  • Salsa:
  • 1 green chilli
  • 1 finely diced shallot
  • 2 tablespoons of chopped coriander
  • ½ mango stoned, peeled and diced
  • 1 red pepper diced

Preparation method

  1. Drain the tofu before cutting it into 2cm cubes. To drain the tofu, wrap kitchen towel around it before leaving to drain for 30 minutes.
  2. Time to make the salsa, start by mixing all the ingredients together before covering with lime juice and salt and pepper. With the remaining lime juice, sprinkle the juice over the cabbage.
  3. Mix 2 teaspoons of oil and the spices into a mixing bowl, adding the now drained and cubed tofu and covering both sides of the tofu with the spices.
  4. In a hot frying pan place each piece of the now seasoned tofu before frying for two minutes on each side until the tofu has turned golden and crispy.
  5. In warm tortillas, add the lettuce leaves before placing the tofu onto the leaves and sprinkling with the salsa and serving.
