Bubble and Squeak

To save money and eat well make one simple change and let that be to reuse every single piece of left over ingredients, turning it into delicious meal. One filling and delicious meal that the whole family are going to love is bubble and squeak made from your Sunday left over roast dinner.

Bubble and Squeak

  • 1 tablespoon of duck fat
  • 4 slices of bacon
  • 1 finely sliced onion
  • 1 finely chopped garlic
  • 15 Brussels sprouts sliced
  • 400g of cold leftover mashed potato or crushed boiled potatoes

Preparation method

  1. Start by melting the fat in a non-stick pan allowing it to get hot before adding the bacon to cook. As the bacon begins to go brown, add the garlic and the onion to the pan, before adding the Brussels sprouts and leaving to gain some colour.
  2. Leave the Brussels sprouts in the pan for around 5-6 minutes.
  3. Once the Brussels sprouts have begun to get colour, add the potatoes into the pan before mixing with the other ingredients. Push all the ingredients down to the bottom of the pan so that they cover the base.
  4. When the ingredients have begun to cook, flip the ingredients over to cook on the other side. Make sure that you let the ingredients cook and gain some colour.
  5. There you have it, a delicious and quick bubble and squeak.
