Blackberry and coconut milk Vegan ice cream

After World Vegan Day on the 1st November, we want to suggest a tasty and healthy dessert for Vegans worldwide.

If like us you have tubs of frozen blackberries stored in your freezer, now is the time to use them to make a delicious guilt free ice cream.

Blackberry and coconut milk Vegan ice cream
PREP TIME 10 COOK TIME 2-3 MAKES 4
  • 2 cans of chilled coconut milk
  • ¾ cup of white sugar
  • Seeds from 1 vanilla bean
  • Pinch of salt
  • 1 cup of defrosted blackberries

Preparation method

  1. Prefreeze your ice cream maker.
  2. Empty the coconut milk, sugar, vanilla, salt and blackberries into a blender and blend until it is completely smooth.
  3. Transfer the mixture into the ice cream maker while it is cold and place into the freezer for a couple of hours until you are ready to serve.
  4. If you wanted to add other fruit like blueberries, strawberries or cherries, just follow the same method.
  5. When serving the ice cream, use an ice cream scoop to roll the mixture into a ball.
