Beetroot and Walnut Salad On The Go

A portable salad for those on the go. Not satisfied with a bland lunch, this beetroot and walnut salad is exciting. Full of flavours, look forward to lunch with this spiralized salad on the go!

Beetroot and Walnut Salad On The Go

  • Dill
  • Baby spinach leaves
  • Thinly sliced beetroot
  • Chickpeas
  • Spiralized carrots
  • Chopped walnuts
  • Thinly sliced red onion

Preparation method

  1. Using your portable Mason jar, start by putting a thin layer of dill at the bottom of the jar.
  2. With your thinly sliced beetroot, add a layer on top of the dill before laying with chickpeas and spinach.
  3. Taking the spiralized carrot, layer on top of the spinach leaves before adding a thin layer of red onion and topping with more leaves.
  4. Top the salad by adding a small handful of walnuts to the top of the salad.
  5. When you are ready to eat the salad, shake the jar to allow the dill dressing to cover the salad.
