Beef Enchiladas

A quick and simple dish to prepare, next time you are short of dinner ideas, this Beef Enchiladas will go down a treat.

  • 500g of minced beef
  • 1 onion finely chopped
  • 1 garlic clove crushed
  • 400g of chopped tinned tomatoes
  • 3 tablespoons of tomato puree
  • ½ teaspoon of dried oregano
  • ½ teaspoon of ground cumin
  • 1 red chilli
  • 8 tortillas
  • 50g of cheddar cheese grated
  • 1 jalapeno pepper sliced

Preparation method

  1. In a warm frying pan, fry the mince and the onion for around 5 minutes or until it has begun to brown. add the garlic and fry for a further minute before adding the tomatoes, cumin, oregano and tomato puree.
  2. Take the red chilli and slice and deseed it, keeping a few slices to add as a garnish later on. Place the rest of the chilli into the mince beef before bringing the pan to the boil and leaving to simmer for 15 minutes.
  3. Open the tortilla wraps and spread a little of the cooked minced into the centre before rolling up and placing into an oven proof dish. Roll up the rest of the enchiladas and place in a row before topping with grated cheese, the left-over chilli and the jalapeno pepper.
  4. Place into the oven and bake for around 10 minutes until it has turned golden with a slight crisp, serve with guacamole.
