These vegetarian meat free aubergine meatballs are a fantastic choice for anyone thinking of going meat free for a day. Super tasty and easy to make, these aubergine meatballs rival the real thing!

Ingredients
2 aubergines finely diced
1 onion finely chopped
3 garlic cloves finely chopped
Olive oil
Sea salt
Ground black pepper
1 lemon
Handful of pitted black olives
1 red chilli, finely chopped
Handful of fresh basil
1 tablespoon of balsamic vinegar
90g of breadcrumbs
Preparation method
To make the aubergine meatballs, start by placing a frying pan over a medium heat and add the aubergine, onion and garlic with a bit of oil until they begin to show signs of softening and gaining colour.
Once they have begun to gain some colour, add some of the lemon juice and a bit of zest from your lemon.
Tip the ingredients from the frying pan into a blender along with the olives, chilli, breadcrumbs and balsamic vinegar and blitz all the ingredients together.
When you have blitzed all the ingredients together, if the ingredients are too dry add some olive oil, if the ingredients are too wet, add some more breadcrumbs to the mix.
With the blitzed mix, shape the mix into balls. Using a frying pan, add olive oil to the pan and cook until the aubergine meatballs have cooked all over.
